Hummus!

So I drove down to Planet Organic yesterday to stock up
on some Sundried tomato hummus
(They SERIOUSLY make the best hummus)
but of course they were out. 
Go figure.
So then I remember that I looked at the ingredients
and I had all of them except tahini at home
so I decided to grab a jar of that and make 
my own!
And it did not disappoint!
It made a huge batch and it's super tasty!
Much cheaper than buying it every couple days
and I can change the flavor per batch if I want!
Bonus!
It goes something like this

Hummus:
1/4 cup EVOO
1/2 jar sundried tomatoes {we like them}
3 tbsp Tahini
a big squirt Sriracha hot sauce
1/4 cup fresh lemon juice
4 garlic cloves
1 can chickpeas

I threw it all in my super blender and it
came out soooooo creamy and yummy
but I'm sure a regular food processor would
work it probably wouldn't blend it as creamy. 
Anywho... ENJOY!

Latest Concoction

Well I scrambled today to make something for my
 lunch and itturned out delish!!!!
I found a recipe on Pinterest a while ago and
finally got around to making it. 
Of course I added a few things and took 
out a couple but overall it was really yummy
and totally satisfying!
If green is your colour then this is the meal for you!

Cilantro lime Chicken wraps
measurements: 
2 cups Cilantro
2 tbsp Olive Oil
1 1/2 tsp lime juice
1/4 cup chicken stock
* put in the food processor until blended*
 tossed in:
pumpkin seeds
hemp hearts
pine nuts
salt to taste

I mixed in some quinoa I had in my fridge and 
some chicken I already baked. Threw it in an 
ancient grains wrap.
YUM.
Even Rhys said it's a keeper.

Onto the next

Now that heart day and family day have are 
officially over, it's now time for the best holiday
of the year. St.Patrick's day!
Not only is St.Patty's a fun holiday but it's also the 
day Rhys and I met {3 years ago} and also our
anniversary!
The countdown is on!

"Man Cold"

So remember I was telling you that Rhys 
caught Kristin's cold last weekend. Well I made 
it through the week without catching it!
Phewf! Like I said, I have the immunity of 
someone on Chemotherapy which means
that I catch everything! So it came as 
quite a relief that I didn't catch this one considering
it kept Rhys home from work. {which NEVER happens}
Until I woke up this morning. My throat was 
plugged. My nose is plugged. My forehead is plugged.
GREAT.
Now I'm hacking away trying to unplug my
throat. I'm giving up on my nose. And hopefully
Advil will help with my frontal sinus headache.
I officially have the "man-cold"

Sweet Sweet Sunshine

I did it! My running shoes officially got 
used this morning. While it certainly wasn't the 
longest or the quickest, it felt GOOD to go.
Today is much brighter than yesterday. I soaked in
the warmth of the sun on my skin. There were lots of 
fisherman down by the river.
Eddie was running around like a crazy man.
What joy.

Rhys and I haven't had the chance to spend
a single heart day together and yesterday 
was no exception. The last 3 years I have worked
eves. I loved reading all
the stories and seeing everyone's flowers and plans
 even if I didn't get to spend it 
with my love. 

I did however find a card a couple weeks
ago that made me smile so I picked it up for
Rhys.




And keeping with true Rhys style he 
left me a letter when I got home accompanied
by my fav's.... Tulips. 
A little taste of the rest of my life....

Up's and Down's

Yesterday I had a really busy and productive day.
It felt sooooo good. I've been battling the winter
blues and to get things done felt great!
And then today, I didn't get out of bed.
Well I did... but barely.
The thing about working evenings and
having your life really simplified and boring
is that it's easy to not do anything.
I fill most of my days with things to do but 
there isn't anything that HAS to get done. 
I can easily lock Eddie and Millie in my bedroom
crawl into bed with my laptop and spend the
entire day there. NOT GOOD!!!!
That's exactly how not to feel good about yourself.
So tomorrow I'm not doing this again.
It's funny... this blogging thing.
Most of the time you don't want to write the bad
parts. You kinda wanna brush it under the rug.
Put on a front. Not let people know that for some
odd reason {because there really is no reason at all}
that you're struggling. 
You can feel the judgement. The comparisons.
Well I'm here to say that my life is not perfect. I 
don't have a busy life. I'm not lazy, It's just that at this
point in time, I don't have anything that is all consuming.
I'm trying every day to be more healthy,
to be more active... But man
I could just use some good sunshine.

Model Milk

Rhys caught my sister's darn cold over the weekend
and I will say it was all worth it because I got
to spend precious time with my 3
favourite little people... Rhys, prob not!
Haha. The lucky thing about Rhys is that 
he hardly EVER gets sick and recovers
quite quickly where as I have the 
immunity of a chemo patient. I get sick
quite often and don't bounce back so quick. 
Anyways, in a rare occasion Rhys stayed home
from work yesterday and slept the entire thing 
away as I puttered around in the morning and then
went on my way to do the usual errands.
We try to keep the rule of thumb that both of us grew up 
with and that's- if you stay home from work/school
then you don't get to go out at night. Well
as grown ups sometimes it makes hard
decisions. He was feeling a bit better in the afternoon
and we had made dinner plans weeks ago for a 
friends birthday. We decided to be naughty and 
go anyways. Well the food was amazing. It did 
not disappoint. Rhys unfortunately started to feel 
yucky right before we left and didn't have such a good time. 
He couldn't taste the amazing food and was a bit
gaggy. Oops. 
For the rest of us Model Milk was a hit.
It's this "cute" from the outside place on 17th ave
but once you get in you realize this place is HUGE!
It was quite trendy- very loud but the food did
not disappoint and the wine was a hit too.
We shared some Rabbit crostini- YUM.
 
I ordered the pork tenderloin- the kale stole the 
show. I'm not sure why I ever order pork because
it's not my fav. It was good
but it was pork. Rhys ordered the Burger
which really shouldn't be a "burger". They make the meat in
house and can order it however rare you choose. Rhys ordered
his medium. It was drool worthy. Seriously. I would hate to 
order a burger at a fun night out but this was really tasty. It
might be ordered for myself if we return. 
Then the boys ordered apple pie,
I got a peanut butter ice cream sandwich- hello YUM
 
I only ate half though so even if it was a treat I tried to make myself
feel better about it. Anyways, I would for sure go back!
2 thumbs up.
 2 appy's, 2 Entree's, 2 desserts, and wine
came to $125- so if that's in the budget we 
recommend checking it out!

Book # 2

This book was actually quite amazing. It took over my life
for a day and I found the hours ticking by and I was still
stuck in the same-ish spot reading. 
Eddie wasn't impressed this day.
But the book {autobiography}was good. It was about a 24 year
old woman who starts behaving oddly and goes
through a medical crisis before being diagnosed with
a weird ailment. 
It was her story of becoming ill, being diagnosed, and 
the long road to recovery.
2 thumbs up. One I would recommend.

Farm

It was nice to get out of the city this weekend and head
to the farm. After it felt like an extremely long drive we made 
it and the dogs immediately began to have fun. Eddie goes
absolutely bonkers... And in turn I go bonkers.
Anyways we had a good sleep on Friday night and then
lazed about with my Mom on Saturday morning. 
Then it was off for a freshen up on the hair. It's 
always nice to have a chit chat with Jen and walking
away with no roots is the best!
I ran a few errands while I was in town and then back to the
farm only to head back out and go to Kristin's farm. 
They added new critters. They now have
2 Donkeys, 10? Chicks, 2 dogs, 2 geese... I have no idea how
many horses, a guinea pig, 2 cats.
So much fun. The girls just love the farm life. I have to say
that Rhys and I get a tad jealous at their little hobby farm life
but I KNOW in my heart that it's not the right time for that
to happen and that at this point we wouldn't love it nearly
as much as we love the idea of it. 
I do however think we would LOVE a guinea pig.
Nellie is just so sweet. But... with Eddie around, I don't think
Nellie would last very long at our house.

Looking forward

 
I'm so excited to be heading to the farm 
this weekend. I'm looking forward to letting
the dogs run and play. I'm looking forward to seeing
Kristin's new babies {chicks}. I am looking 
forward to meeting Amy's new squeeze Kyle.
I'm looking forward to hitting the dirt road with
my running shoes. I'm looking forward to spending some 
time with my Mom. I'm looking forward to 
giving my nieces lots of kisses. 
So many things to look forward to.
Gotta go pack!!!!

Wheat and Sleep

I had my appointment this morning to meet with
the holistic nutritionist. I was curious to see what 
she would have to say about a 
"diet" plan and a way to get all my
hormones sorted out. 
We first went over the paperwork that I filled out
prior to the appointment and she had
a few areas of concern
 
1. I wasn't getting enough sleep at the proper
times of a normal sleep cycle. Her goal 
is for me to be in bed and lights out by 10pm
on off weeks and then home and straight to bed
on my on week. I often read the news and 
facebook in bed before lights out. That 
is stopping asap. A bath and a cup of tea
and lights out is the prescription.
2. I am not drinking enough water. She said it is 
really important to not only drink enough but also 
the "cleanest" water you can afford.
3. I don't take any vitamins. She said she rarely meets 
anyone who takes absolutely no supplements. Well my
friends, I don't! I take advil when I have a headache,
Zantac if I have heartburn, and benelyn if I have 
insomnia... that's it! So I am going to get a bottle of
mulit's that are not synthetic they are made
 from fruits, veggies, and plants
4. I am having food sensitivities. To what, we aren't 
sure but they are definitely there. So I'm 
officially on a wheat elimination 
{not to be confused with a gluten elimination}
The difference I'm not certain of but with a little 
research tonight hopefully I will have it under control! 
In the meantime I went to Chapters and bought
"Wheat Belly" which she recommended. 
I have a few friends who are reading it currently
and my Uncle who has read it and LOVED it. 

The whole meeting was about an 
hour and a half and although most of the
information was very common sense it was
nice to know that I was already doing most of the
things that she was talking about. 
I was very open and honest with her about
struggles with food and disordered behaviours 
that have played a factor in my life.
She was very perceptive and had really good
suggestions on how to deal with that as well.
Overall it was very positive and I have another
appointment in 2 weeks time to see how it is going.

2 more

2 more days until I have my days off.
I can't wait. It has been a long week at work. 
It was VERY slow for the majority of it,
which was really nice because we had a great
deal of time to do some chit chatting at work.
I don't often work with the full time staff because
they mostly work days and try to trade out of their eves.
Well unlucky for Gavin this week he wasn't able to 
trade out of the full 7 so he got stuck with us
for his last 4. It was refreshing to see a new
face on the evening shift and it was
filled with lots of interesting 
conversation. Gavin is quite the worldly guy and 
we had tons of fascinating topics to cover.
It's always nice to talk about matters of the
world with someone who does research
and really has well informed opinions.
I haven't touched my running shoes in about a week.
Something I'm feeling dreadfully guilty about,
I'm also feeling guilty that my fridge is empty and I
bought dinner from the cafeteria last night.
Although I could have made a worse choice than
a turkey sandwich it's still something I have been
trying to avoid. Packing a healthy lunch is always
a good way to avoid temptations.
2 days until I have a appointment with a fertility dietitian,
I'm very interested to see what she has to say
and add some more positive changes into my life.
I'm hoping I walk away with some new motivation.
As much as I say I am going to run today, I'm not,
and probably won't tomorrow either. Seems to be the trend.
But I am off to Costco to get some healthy eats into
our fridge and tomorrow it's a energy ball making
kind of day. Hopefully my week off brings the
boost of motivation I so desperately need right now.

Slacker Weekend

Yesterday Rhys picked up an overtime shift, which was
fine because I had to work anyways.
Eddie, Millie, and I chilled out at home, read 
a little and watched a movie before heading into work.
Most of my days are filled with errands and things
to do but I was a bad "dog mama" and didn't take
the pups out for our daily play. Eddie was bored... as you can
see. This is the sad face I get to look at when I'm being 
a slacker. It's probably for the best, he keeps the guilt
high enough to get me out of the house and into the
sunshine every day. 


This morning Rhys and I headed out the door
around 930 and went up to Inglewood 
to hit up one of our fav brunch spots. 
The Deane House is always delish, rarely a wait
and bright and sunny. It was a delightful way to spend
the morning before heading to work.
We then drove around the area and looked
at all the cute little houses that hopefully one
day we can afford to sneak into. 
I dream of living in Inglewood one day.
Until then we can drive and dream.


Tomorrow I need to get my running shoes on
and burn off some of that yummy hollandaise!
